Malaxation

After crushing, malaxation completes the preparation of the olive paste before it moves on to extraction. Carried out at a controlled temperature, this step encourages the oil droplets dispersed in the paste to come together and allows the fruit's aromas to fully develop — a decisive factor for final yield.

Pieralisi malaxation units are designed as independent modules that can be combined to suit batch or continuous processing needs. Temperature, rotation speed and malaxation time are all adjustable to suit each olive variety.

The shape and volume of the tanks, as well as the geometry and rotation speed of the paddles, are decisive parameters: they determine both the quality of the oil obtained and the performance of the process. The range covers different formats and automation levels, from compact tanks such as My Blend SX or Simplex to higher-capacity configurations such as the Molinova ORO series or the 6000-litre tank, as well as the Molinova TG and the Protoreattore, designed to intensify contact between the paste and the oil already released.
